20 dozen eggs
Sliced American cheese 120
Quart of half and half
Black ground pepper, to taste
Brown meat well.
Mix eggs well add half and half and mix well
Scramble eggs in batches, my pan works great with 4 dozen/load. Mix sausage in once near done. Cooking little rare then add to hotel pan adding about 6 slices cheese per dozen and mix well they will continue to cook. Keep pan covered so don't dry out.
Serve with tortillas
3 quarts picante sauce
2 - 10# cans refried beans (heat adding little chicken broth, cumin, picante sauce)
Chopped fresh cilantro, olives.
Shredded cheddar cheese.
