Chicken stuffed treats
- boneless chicken flattened with tenderizing hammer so it is thin. (Marinate if you have time in Moore's or L&P Chicken or your favorite.)
- add layer of softened cream cheese.
- add shredded cheddar cheese.
- sprinkle liberally with diced fresh jalapenos.
- (I've added chorizo a few times with good results but not required.)
- Roll up tightly and slice in 1-2" rolls.
- wrap with bacon, use wooden toothpicks to hold in place.
- dust with your favorite rub (I use ButtRub, Billy Bones, CowTown, Double D's Duke's Dirt ... any good rub including homemade.)
Place in smoker at 250-325 deg. F until bacon is crisp and chicken is done. Typically about one-two hours using a mesquite/oak wood blend.
