Chicken stuffed treats


  • boneless chicken flattened with tenderizing hammer so it is thin.  (Marinate if you have time in Moore's or L&P Chicken or your favorite.)
 
  • add layer of softened cream cheese.
  • add shredded cheddar cheese.
  • sprinkle liberally with diced fresh jalapenos.
    • (I've added chorizo a few times with good results but not required.)
  • Roll up tightly and slice in 1-2" rolls.
  • wrap with bacon, use wooden toothpicks to hold in place.
  • dust with your favorite rub (I use ButtRub, Billy Bones, CowTown, Double D's Duke's Dirt ... any good rub including homemade.)



  • Place in smoker at 250-325 deg. F until bacon is crisp and chicken is done.  Typically about one-two hours using a mesquite/oak wood blend.
