bacon tots


  • Cut jalapeno or your favorite pepper into slivers.

  • Slice cheese, Cheddar, Colby, etc.... into small chunks about 1/8" rectangles as long as your tater tots.






  •  cut bacon slices in half

  • Take a slice of bacon and wrap the tot enclosing the sliver of pepper and chunk of cheese, using a toothpick to hold in place.
Note: (If you let the tots thaw slightly and cut a small slit in the side to press in the cheese and pepper, this assist in a pretty presentation.)

Dust with your favorite dry rub.

Smoke on the smoker until bacon is crispy about an hour at 275 or could cook on the grill or even in the oven at 325 or so.
