green tomato salad


 
  •  three or four green tomatoes
  • one red tomato
  • one sweet onion (white or red) I use 1015 or Valida when I can find them.
  • one cucumber
  • kosher salt, few shakes doesn't take much.
  • black ground pepper, add quite a bit
  • stir and cover with apple cider vinegar


Best if it can set for four or more hours before eating.  Great with fresh from the garden peas and pan of cornbread. :)
